FST 103A Food Service Sanitation Lab

This course provides a laboratory experience for enhancing student skills in the basic principles of sanitation and safety in the foodservice industry. Emphasis is placed on the practical experiences that enhance personal hygiene habits, safety regulations, and food handling practices that protect the health of the consumer. Upon completion, students should be able to demonstrate the application of sanitation and safety production procedures in foodservice operations.

Pre-requisite(s): CUL 110 .
Course is typically offered in Fall.
Student Learning Outcomes (SLOs)
At the completion of the course, the will be able to do the following:

  1. Apply personal hygiene habits that protect the health of the consumer in kitchen lab setting.
  2. Apply sanitation and safety principles in kitchen lab setting.
  3. Create a cleaning schedule for a food truck or mobile catering unit based on safety and sanitation principles according to industry standards.
